Yesterday I had a sudden craving for something sweet, and it just so happened that we had all the ingredients for chocolate chip cookies! These took me about 5 minutes to make and 10 minutes to cook, so they really are speedy little things. The base idea I used is a simple cookie recipe which is pretty robust and will stand up to almost anything you throw at it – at the last minute I mixed in a tablespoon of peanut butter and a tablespoon of nutella, and you can swap out the chocolate chips for anything – m&ms, nuts, more chocolate chips..the possibilities are endless!
Here’s what I did.
100g melted butter
150g sugar – granulated or demerara works best I find
200g plain flour
pinch of salt
chocolate chips/smarties/walnuts.. as many as you want, and whatever you want!
1tbsp peanut butter
icing sugar, to dust
Preheat the oven to 200c, then line a baking tray.
Combine the melted butter and the sugar, and then mix in the egg. Stir in the flour and the salt, and then add any extras you want.
Spoon balls of the cookie dough onto the parchment – they will spread while cooking so allow enough space for this to happen. I like to make my cookie dough balls about the size of a ping pong ball.
Pop them in the oven and cook for about 10 minutes – they should be golden and crispy around the outside, and soft and a bit squidgy in the middle. I put mine on a board and dusted them with a bit of icing sugar.
Enjoy! Super quick, simple, and wonderfully delicious. Watch out though, it’s extremely easy to eat all of these in one go!
