Just a short one singing the praises of buttercream…
Chocolate buttercream is so delicious that when I made this batch I have to admit I probably ate almost a quarter of it before it even made it to the cake… Here is the recipe!
Ingredients (enough to fill a 20cm cake)
75g/3oz/6tbsp unsalted butter, softened
175g/6oz/1 cup icing sugar
15ml/1tbsp cocoa powder
2.5ml/ 1/2tsp vanilla essence
Put all the ingredients in a bowl or food processor and beat well until smooth. It’s really that simple!
Other flavours include:
Simple Buttercream – 75g butter, 225g icing sugar, 1tsp vanilla essence, 2-3tsp milk
Coffee Buttercream – stir 2tsp of instant coffee into 1tbsp boiling water, and add to Simple Buttercream instead of milk
Mocha Buttercream – stir 1tsp of cocoa powder into 2tsp of boiling water, beat into Simple Buttercream. Add a few drops of coffee essence
